Recipes

Paducah Chicken Salad
(from the Paducah Mercantile ca. 1983)

Susan is a free lance copy editor in Decatur, AL. She attended Agnes Scott College with Janine Hagan and they recently re-discovered each other. Susan used to take vacations on the back of a Harley Davidson and Paducah, KY was a favorite ride. The Paducah Mercantile sadly no longer exists but the memory of the great chicken salad lingers on!

Makes 3-4 servings depending on serving size.

1 cup white chunk chicken per person
8 oz orange/mandarin yogurt
1 banana
jellied cranberry (cut in squares) - I use 1/2 of a small 8 oz can
1 Can mandarin oranges
Raisins
Peanuts

Place 1 cup chicken in plate on lettuce if desired. Spoon several spoonfuls of yogurt on top. Slice banana and divide among plates. Slice jellied cranberry into small squares; top with spoonfuls of mandarin oranges. Sprinkle on raisins and peanuts to top off to taste. Enjoy!!
