Everyone’s Favorite Quiche

This is a year-round recipe. It really comes in handy during the holidays for late breakfasts, simple lunches, or suppers when one gets tired of eating leftovers or baking a lot after holiday expeditions. This recipe is also a great gift for people who are sick or needing care and a dish that will work for any meal.

1 pie dish (or aluminum pie pan, if this is to be given away) Pie Crust (Pillsbury’s All-ready Pie Crust ™ )
2 heaping TBSP. flour
1 pkg. (2 or 3 cups) of grated, mixed cheese (Colby-jack or 4-cheese Mexican, etc.)
¼ tsp. salt
Dash of pepper
3 eggs or egg substitutes
1 cup of milk
5 to 7 slices of bacon

Fry or microwave bacon until crisp…drain onto paper towel. Line pie crust in pie pan and crimp edges of “pie.” Put several fork “holes” in the bottom crust. Pre-bake crust in 400 degree oven for 10 min. Remove crust, crumble bacon into hot crust, then mix remaining ingredients and pour over bacon into crust. Be sure and put flour in small container and add some of milk in small amounts to make a paste and then add the rest of the milk (making it smooth) before adding to the rest of the mixture.

Bake at 350 degrees from 30-40 min.(depending upon your oven. Watch closely.) or until “set.” Doneness can be checked by the “tooth-pick test” in the center of the pie. Let cool and enjoy this morning, noon, or night!
